Aloe Plant

Hey all. My mom just brought her potted aloe plants back into the house yesterday and is now faced with a new issue. During the summer months they grew a good deal. I was even making jokes that they look like giant octopus stuck head first in dirt. So my question is this. How do we trim them back? She cut a piece off of one some months ago because my father burned his hand, and she wanted to put the aloe inside on the burn. But that area closed off and browned just at the tip, and it hasn't grown a bit since. So she is afraid of trimming them. Any ideas on how to do this while still leaving them a chance to grow (and hopefully not leaking aloe all over the carpet)? Thanks!
