Annabelle Hydrangeas

I have some lovely annabelle hydrangeas that I bought at the local community gardeners' sale this spring. They are just now going past white and into pale green. I want to cut and dry them, but I don't know whether this is a good idea with plants that are new to my garden (they only have a few flower heads each this year.) Provided that it is ok, does anyone have good tips for when and how to cut and dry them?
