Butterscotch Almond Bars

I’ve been hoarding photos and recipes of desserts I made over Christmas so I’m slowly going to start posting them at my journal. This one is particularly tasty so I thought I’d share! Here’s what you’ll need: * 2 cups brown sugar, packed * ½ cup butter * 2 eggs * 1 ½ tsp. vanilla * 1 ½ cups all purpose flour * 2 tsp. baking powder Base Melt butter in saucepan, remove from heat. Stir in brown sugar, eggs and vanilla. Combine flour and baking powder and stir into ingredients in saucepan. Spread in a 9”x13” greased pan. Bake at 350o for 20 minutes. Topping * ¼ cup butter * 1/3 cup white sugar * 1/3 cup corn syrup * 2 tbsp. water * ¼ tsp. salt * 1 ½ cups sliced almonds Combine butter, white sugar, corn syrup, water and salt in saucepan. Bring mixture to a boil for 4 minutes, stirring constantly. Remove from heat. Stir in sliced almonds. Spread topping over baked base. Bake at 350o for an additional 15 minutes. Optional – melt 1 square semi-sweet chocolate and drizzle over pan. Butterscotch Almond Bars As you can see, I opted out of the chocolate on top
