My husband and I fell into the trap of buying a lot of convenience meals since he started working 3-11, and we had a baby. So now on our days off, we cook for the week ahead. Here are two recipes. 1. Everything and Rice Boil 5 cups water or broth. Add 2 cups brown rice, lower heat, and simmer for 35-40 minutes. While the rice cooks, gather up all your odds-n-ends veggies or a bag of frozen veggies and cook. Steam, saute, whatever. Be sure to include some garlic and onions for extra yum. Add to the rice when it's done. Season with some pepper, herbs, whatever you've got. Meaties can add cut up cooked chicken or beef; vegetarians, add a can of beans if you feel like it. Freeze in individual portions. I usually just make this with the rice and veggies and cook a veggie burger with it at dinnertime. this week's version included onion, lotsa garlic, celery, half a pepper, some celery, three mushrooms, green onions, a handful of carrots, sage, and thyme. Yum. 2. Mexican Rice Thing Start cooking a big pot of black beans (follow directions on package). Or use canned. While your beans cook, make rice. Mix water or broth and canned tomatoes to make 5 cups liquid. Bring to boil. Add 2 cups brown rice, lower heat, and simmer for 35-40 minutes. Mix together cooked beans, rice, and a can of corn. Add a tablespoon of taco seasoning, or a cup of salsa, or a can of enchilada sauce. Again, add meats if you want. Freeze in individual portions. Grate some cheese on top when you eat it. Also: homemade taco seasoning! 1/4 cup instant minced onion 2 Tbsp. chili powder 2 tsp. paprika 2 tsp. crushed dried red pepper flakes 1-1/2 tsp. dried oregano 1/2 tsp. dried marjoram 1 Tbsp. salt 1/4 tsp. pepper 1 Tbsp. garlic powder 1 tsp. ground cumin
