Now that its cold and we are all watching our pennys this is a wonderful easy recipe. This recipe that has 8 servings costs about $2.50 Double the recipe and with biscuits, ice tea, and my famous rice pudding was enough for 9-10 people for about $20 a rented movie and we were good to go for a cheap party. This is the best recipe I have ever found for pea soup. What I like about it is that as you can see it is vegatarian, non dariy, no fat, and you can make it low salt, and it still tates good Ingredients: * 8 cups water * 2 cups green split peas * 1 rib celery -- coarsely chopped * 1 large carrot -- chopped * 1 small onion -- chopped * 1/4 teaspoon thyme * 1 bay leaf * Salt * Pepper Directions: Combine water, peas, celery, carrot, onion, thyme, and bay leaf in large kettle. Season to taste with salt and pepper. Boil vigorously 20 minutes, then reduce heat, cover, and simmer until split peas are tender. About another 30 minutes. If you want a more even and creamy soup run it through a blender or use a stick blender. If you make it and let it sit in the fridge it will thicken so you will need to add a bit of water to thin it down. I use to make this for parties and have a whole bunch of mix ins that people could add themselves ham cubes bacon crumbles smoked turkey cubes shredded cheddar cheese grated parmesan chopped onion roasted garlic fresh or thawed peas hot pepper flakes sour cream chopped bell peppers tabasco croutons I would server cheese biscuits (bisquick with shredded cheddar and a touch of garlic salt) Ash
