Choosing employment?

Ok, so I am in a bind. I have been offered two jobs, both as a waitress/bartender at very affluent restaurants.

One has a set schedule, good hours, 3 days a week, including Saturday and Sunday (busiest days) and I have semi-committed. However, it is in Clayton, NY, right on the Lake and it is semi-secluded, which means not as busy. It is small and cozy though, and the management is super friendly with only 2 of us bartenders, only one on at a time, which means more money not splitting tips. Has also been on the Travel Channel 33 times for ‘Taste of the Town’ and won several awards for their cuisine. Average plate cost is about $30.

The other is in the heart of downtown Alexandria Bay, NY, also right on the water (its a floating restaurant) and would be EXTREMELY busy. However, I would have to work in a team and split tips with another waitress (2 waitresses work together essentially). And I would probably work Thursday/Friday nights. Average plate cost is slightly less, ranging from about $18-$30 per plate.

Should I try and work both jobs, and work probably 6 days a week, as well as taking care of two children. Or pick one? If I try and work both, they both want me to start training on Monday the 12th. How should I go about that? I want to work both, as I have heard that both have the potential to pull in close to 500$ a night, but I dont want to get burnt out either.

Any suggestions on how to manage both, or go about choosing one? I can provide links to the restaurants if that would be helpful, but possibly unsafe? (not sure on that one)
