eat more leek leaves!
i just wanted to post this, because it's a poor skill (even if you are lucky enough to already know it). leeks are usually used in soup, and only half the leek is used. in fact, most recipes for leek-based soups will tell you to throw away the upper half, which is a bundle of leaves. they taste pretty good, though. the leaves are like greens, and only have to be steamed/roasted/braised/etc a few minutes longer than regular leafy greens (like raw spinach or something). they look tough, but they cook out very tender, very quickly. since i started eating the leaves, it's like having twice as much. i like leeks.
