eggs with little or no milk
So, I'm one of those people who eat everything in the house before I go grocery shopping and it's getting down to the bare minimum now. lol. I had three eggs left and an empty stomach so I decided to make some scrambled eggs. Well, I am lactose intolerant so I RARELY keep cow's milk in my house. In lieu, I buy organic soy milk. I would usually use that for my scrambled eggs but realized that the kind I had was Vanilla flavored. ELGH! So, I go searching in the fridge and realized I had a can of V8. And I used it (and just a drop or two of the soy milk to fluff them up more) and the eggs turned out SO GOOD. They had so much flavor that I didn't even need to use Ketchup or anything like that. And plus, I got a few servings of vegetables and was able to use up some V8 I was probably never going to drink. (I think my bf brought it over for some reason.) Either way... Poor skill: vegetable Juice instead of milk in eggs is a fantastic substitute :) Especially since milk is getting mad expensive.
