Great idea for leftover meat...use it for enchiladas. All I do is use a baking pan (the size depends on the amount of leftover meat...the more meat there is the bigger the pan) and line the bottom with tortillas (I got a pack of 50 for $.89 at Fry's) and put enough cheese on top of the tortilla so when it melts they'll adhere together. Put the meat on top of the cheese. I like veggies so I put green chiles, corn and black beans in with the meat, but you can put the meat in plain. Put another layer of tortillas on, another layer of cheese, and cover the thing with a can of enchilada sauce. Put it in the oven on bake at 350 degrees for about 10 minutes (let the cheese get really melty) and then you have enchiladas!
