Foodie on a Budget: I Heart Jews!
I had the pleasure of discovering Roman Jewish cooking on accident in Philadelphia. I wandered into this place called Tiramisu that seemed like a decent upscale family Italian place. I read the back of the menu and realized that it was Kosher Italian. NEATO! Here's a recipe I made recently and absolutely loved. Artichoke Chicken Chicken Thighs (deboned and skinned, chopped in large chunks) 1 can of stewed italian tomatoes (I like the ones with basil, garlic, etc) 1 can of artichokes, drained olive oil lemon juice salt and pepper Salt and pepper the chicken. Fry in olive oil. Deglaze with lemon juice and the juice from the canned tomato. Add the tomatoes and artichokes. Cook until artichokes and fully cooked. Add more lemon juice or salt and pepper to taste. Serve over rice or a really rustic bread. If you choose to make rice, throw a piece of the chicken skin in the pot of water. That way you don't have to use oil and you have that wonderful chicken flavor in your rice.
