Foodie On A Budget: On The Virtues of Carne Picada
We have the recent growth of the Hispanic population in the US for introducing a less expensive cut of beef to our meat market. And of course, I couldn't be happier. Carne Picada beef is the least expensive cut on the market and Walmart seems to have the best price of all groccery stores in my area. This beef is best when fried for a long time in a combo of butter and oil. One note: if you do not cook it long enough and hot enough, it will be like rubber. It has a REALLY high water content, and it's too easy to see it turn gray and think it's done. Well, it ain't! Let that baby cook! It gets GREAT carmelization.
