Today I was a busy little beaver. I picked the beets from the garden and made two different kinds of beet pickles. There were only about 10 lbs. but I had Doug buy some more so now I have another 25 lbs. to do tomorrow. I will pickle some and can some.
And once that was done, still feeling energetic, I went out to the garden and dug the potatoes. I took pictures to give you an idea how many and how big. The red potatoes are huge this year. There are probably at least 50 lbs. of red potatoes and 25 of white. I like the red potatoes more, so I am thinking next year I will only plant reds.
Yesterday I picked a few spaghetti squash from the other garden along with a couple of zucchinis and cucumbers for eating. I plan to make zucchini-peach jam from the zucchinis.
The tomatoes have been starting to produce too, so I have been picking the larger ones to give the smaller ones a chance to catch up. I haven’t decided yet what to do with them, other than just eat them as they ripen. I did make bruschetta the other day with some fresh tomatoes though, and it was delicious.
