Hardening off and other questions from a first timer

My veggies keep growing and growing. My zone 5 weather has been very warm the past two days (nearly 80) but we had a cold snap last week with a night below 32 so I’ve been holding off on planting things outside.

I started “hardening off” my squash, zuccini, beans, cucumbers, and peppers. They do ok, but my yard has a ton of sun and they seem a little yellow in color after a day outside. They’re not too dry and they green up again when I bring them back in overnight. Is this normal?

Also, my pepper plants did great and all of the seeds became tiny little seedlings… nearly 30 of them (can you tell I had no idea how many to plant at the beginning?). I have a square foot raised bed set up and I’m not sure how many I have room for. The book says to put one per square foot, but I’m wondering if they can go closer? I’m also wondering how much one plant will yield. I planted some red and green pepper varieties, as well as some jalapenos.
