Healthy eating on a shoestring budget?
Recently my husband, who was the cook in the house as well as the sole income earner, decided to move out. Now, I'm not entirely sure how to fend for myself. Not only am I broke, but the typical staples such as potatoes, ramen, and rice just won't cut it for me. Because of long-term use of corticosteroids, I not only gained a lot of weight, but it messed up my stomach really bad, too. So I'm looking for low-fat, low-cal, natural foods that will be as easy on my stomach as on my pocketbook. I can't handle anything very starchy, but I can manage whole grains as long as I keep them to one small serving per meal. My meals mainly focus around vegetables, which would be cheap if I could just learn how to buy only what I need, rather than buying up a bunch of stuff that looks good only to find I have no idea what to do with it. So... is anyone up to this challenge? As good as it is, I'm getting really sick of fajitas (without the tortillas, of course) and salmon or chicken with green beans, since those are the only meals I can dream up on my own!
