How hardy is cold hardy?

I started my seedlings on April 6th, with a May 18th in the ground date goal because that's the last chance of frost date here in Colorado.

I have some seedlings that are just going nutso, though. My Anasazi Beans are a foot tall now, and most of my Eight Ball Zucchini is nearly that tall, and they're both showing true leaves.

Now, both these varieties are listed as "cold hardy" on their seed packets.

Well, any idea on exactly what that means they can stand?


It is possible that we could get another snow before May 18th, and we could very well get down below freezing some nights as well, though we've been in about the 40's - 50's recently.

Do you think I could go ahead and put out my beans and my zucchini, perhaps under a plastic tent, and they'd live through a snowing or a frost if we had one?

I'm not sure I can keep them inside for four more weeks, I just don't have the pots or the space!
