With the dreaded swine flu about, I thought we could post some good immunity foods. Here's a soup recipe I recently read about: 2 chicken drumsticks. 4 cloves of garlic. 2 tbsp grated ginger 1 onion 4 ribs celery 4 carrots 2 parsnips 1 tbsp turmeric salt and pepper to taste. 2 tbsp lemon juice. Boil chicken until cooked. Pick meat off and set aside. Simmer the bones with half the onion and 2 cloves garlic and lemon juice. Simmer at least 4 hours but longer is better. Strain the broth and set aside. Sautee the veggies and then add the broth and seasonings. Simmer and add the meat during the last 5 min of cooking. The ginger, garlic, turmeric and chicken broth all have anti-inflammatory properties which lower cytokine production while leaving your immune system intact to fight off illness. This is esp good for the swine flu where cytokines can be an issue. We've also been sucking down lots and LOTS of pure orange juice. What do you eat to keep your immune system in working order?
