Leftover Chicken from Chicken Stock
Someone a while back was asking if they could reuse chicken breasts to eat for later after using them to make chicken stock and I remember saying it wouldn't be a good idea coz the flavor would be gone. While it's true the flavor will be gone, you need to season it a lot if you still want the chicken to be edible. After I made a big vat of chicken stock for Vietnamese chicken soup, I took all the remaining chicken I used up, washed it, and I ended up making it into chicken curry salad for the bread I bake at home. Leftover-Chicken-from-Chicken-Stock Curry Salad - left over chicken from chicken stock, cleaned and washed - curry powder (I use madras curry powder that I found at the Asian store) - black pepper - garlic salt - mayo That's pretty much it! You can probably add raisins or cilantro into it for garnish. The seasoning is highly dependent on your tastes and how much chicken you have left.
