Leftover Rice Inspiration
Inspired by ingredients I picked up at the Asian market yesterday, I put together a not even remotely authentic but simple, cheap and damned good scattered sushi salad. Pretty much, just mix the ingredients below together, in whatever quantities suit your tastes: Ingredients: cold leftover rice steamed leftover veggies (julienned carrots and broccoli, in my cse) pickled radish, diced wasabi peas, crushed pickled ginger, minced rice wine vinegar soy sauce teensy bit of sugar jarred grated horseradish (since I don't have any wasabi in the house atm) The vinegar and sugar approximate the taste of the rice used for sushi. Texture is, of course, different, but good enough for my taste. I think this would also be delicious with julienned cucumber, diced avocado, or asparagus. You could pretty much add anything to it that you'd use for sushi. I've started looking for other recipes for cold rice salads, and have found a ton -- even one for a fruit rice salad!
