Making Summer Bounties Last
I'm terrifically fond of zucchini, squash, plums, and apricots --all things fresh and available to me locally right now. But come December and January they'll be twice as expensive and half as nutritious in the stores. What tips and techniques do you know for storing perishables like these, especially the zucchini and squash? I'm inclined to prep-and-store, but ratatouille has a limited freezer life.
