Malabar spinach

Malabar spinach

The time for warm season crops is over, now it's just a question of what we can preserve for winter. We've picked malabar spinach two or three times a week all summer, and we still haven't made a dent in it. Since I learned that it will climb up a pole, the yield has gone up exponentially. I love the large thick leaves. I havested as much as I'd have time to can today, 6 twelve to fifteen quart pots and containers cooked down to eleven quarts. I very reluctantly canned them. Unfortunately there just isn't any room in the freezer.
