Me and My Zucchini….



Ladies and Gentlemen. This is a 9 pound zucchini that I grew.

Yesterday, I processed it and it yeilded:



10+ cups of shredded zucchini, of which I used 5 cups to make:



3 loaves of spiced zucchini bread and 12 muffins...OK, so I ate one, they smelled amazing, gimme a break!!

The rest made into a creamed zucchini side dish that I adapted from one of those "Low Carb" cookbooks, it takes the place of a potato or rice side dish and you can use any summer squash (Zucchini, Patty Pan or Yellow). Saute with several cups of shredded squash with a little olive oil with some mashed garlic, salt and pepper to taste, until it starts to break down, about 5 minutes or so on medium heat. When most of the liquid is gone, add about 1/2 cup of sour cream, and stir well. It tastes a lot like mashed potatoes, but is really low carb compared to potatoes.

I have a shopping bag of huge patty pan squash that none of our friends we had checking on the garden knew what to do with...about 8 or so that are the size of fat frizbies.

Does anyone have any other recipes for squash they'd like to share?
