Meatloaf Dinner

Last night we made meatloaf with roasted carrots, new potatoes and homemade biscuits.

All the main ingredients:
Meatloaf Dinner
1 lb ground beef
1 lb mild ground sausage
1 pack instant onion soup mix
2 eggs
2 or 3 kinds of leftover chips (we used bbq, sour cream and onion, and nacho cheese doritos)
bread
new potatoes
carrots
(not shown: bbq sauce)*
Carrots:

Cut the ends off the carrots and give them a good rinse. Then place them in a pan (a pre-heated cast iron pan is what I use) and pu them in the oven at 350F

Meatloaf:

Whisk the eggs in a mixing bowl with a little bit of water. Then add the onion soup mix, about a handful each of crumbled chips, and 2 slices of torn up bread.

Once everything is moist, add the beef and sausage.

I always make- er, let- one of the kids do the mushing.

Once it’s thoroughly mushed, turn it out onto the pan and form the loaf.

Potatoes:

These are easy. Just quarter them with a knife and arrange them around the meatloaf.

*BBQ sauce

I forgot to buy some, so I had to make it. The ingredients are:

1/2 cup ketchup
1/4 cup honey
2 tbs spicy brown mustard
1/2 tsp salt
1/2 tsp onion powder
1/4 tsp garlic powder
chili powder to taste
red pepper powder to taste

Just whisk it all together and pour it on top of the meatloaf.

Cover with foil and stick it in the oven.

Biscuits

David’s the bread maker in the family, and the kids love it when he makes something to go with dinner. His ingredients are:

2 cups sifted all purpose flour
3/4 cup milk (we use skim or you could use buttermilk, which we always forget to buy)
4 tbs shortening (you can also use butter)
2 tsp baking powder
1/2 tsp salt

Mix flour, salt, and baking powder and cut in the shortening. Add the milk slowly, until a soft dough is formed then turn it out onto a floured surface and lightly kneadd it for 30 seconds. Roll it out to about 1/2 inch thickness and cut out the biscuits with a floured cutter. (Davis uses a can with both ends cut out.) Also, if you spray the pan with butter spray it’ll help keep them from sticking.

Raise the oven temperature to 400F and pop them in. When they’re done the meatloaf and carrots will be, too.

You may need to let the potatoes cook a little longer, which is fine since you want to let the meatloaf sit for a few minutes. Just transfer the carrots onto a plate and cover them with the meatloaf foil, then move the potatoes over into the carrot pan and pop them back into the oven on 400F for about 10 minutes or until done.
