I used to be a vegetarian and enjoy cooking lots of veggie, grain and bean based meals. My husband likes meat and doesn't consider it "dinner" without. Problem is, meat's @#$^@^% expensive1 Especially the organic and/or local stuff which is all I will eat. So, poor skillets, how do you stretch your meat dollars? We already buy when it's on sale and freeze it, and I am good at getting as many meals as possible out of things like roast chickens. How about other suggestions? Maybe recipes involving meat as a flavoring rather than a central ingredient, or recipes that use less expensive cuts?
