well... maybe not all the boys... but they definitely bring my boys to the table...

Fudgey Brownies, topped w/ an eggless chocolate buttercream frosting that I made from my own brain! and sprinkled with easter dots... lol... I have yet to cut into the sheet o' brownie, but the frosting was very yummy :) and made enough to thickly cover a 13x9 sheet of brownies, plus fill a cannister of frosting (store bought, but recycled) about 3/4 full... Eggless Chocolate Buttercream 2 Sticks Room Temp Unsalted Butter 2 Cups Confectioners (icing) Sugar 2oz Semi-Sweet or Bittersweet Chocolate 3oz Unsweetened Chocolate (or more depending on how chocolaty you want your frosting) (if your butter is in the fridge, as mine often is, you can quickly bring it to room temp by placing it in the microwave @ 50% and nuke it for about 10 seconds per stick... or about 25 for 3 sticks, every microwave is different, but that tends to work for me). Beat butter in electric mixer on high for about 1 minute... slowly add in confectioners sugar a few tablespoons at a time... Scrape the bowl after each cup, and beat for 1 minute... while your doing that, in a heatproof bowl in the microwave (or over a double boiler), melt the chocolate. I used the microwave, and melted the chocolate for 1 minute, stirred, and microwaved again for about 45 seconds... stirred and I had an evenly melted cup of liquid chocolate... pour into mixing bowl and beat for a few minutes... scrape bowl, and beat again... I did this a few times as it took a few scrape downs to get the chocolate completely incorporated into the buttercream... Voila, ready to use.... Store the leftovers in an airtight container... I'm not sure how long it will stay for, I'm not an expert... but I would guess a minimum of a week at room temp, a few weeks in the fridge and a few months in the freezer... just bring to room temp and beat before using again... If anyone is willing to test out the recipe, I'd greatly appreciate your feedback on it. My family make wonderful guinea pigs, but I feel like they're opinions are a bit biased. :) Thanks!!!
