Packaging for mini-loaves?
Hi folks. Like many of you, I plan to bake gifts for people this year. I'd like to give mini-loaves (banana-coconut and apple-pumpkin). How do you wrap something like that? I'd like something a little prettier and upscale than colored Saran wrap and spiral ribbons. Also, where would one find boxes about mini-loaf size, both lightweight for wrapping and heavier for mailing? Banana Coconut Muffins (can be made as as a loaf too, which tastes heavenly when toasted.) Banana Coconut Muffins - makes 8 1 1/4 C all-purpose flour 1 tsp baking powder 1/4 tsp salt 2 very ripe bananas, mashed (3/4 C) 1/2 C unsalted butter, melted 2/3 C sugar 1 large egg 1/2 tsp vanilla 3/4 C sweetened, flaked coconut Preheat oven to 375'. Whisk flour with baking powder and salt. In a large bowl, whisk bananas, butter, sugar, egg, vanilla and 1/2 C coconut until well combined. Fold in flour mixture until just moistened. Divide batter among 8 lined muffin cups and sprinkle with remaining 1/4 C coconut. Bake for 22-25 minutes until muffins are puffed and golden. Transfer to a rack and cool slightly. Pumpkin apple bread (with my modifications) Makes two regular loaves or five minis. This is a moist bread, and freezes well. topping: 1 tbl flour 5 tbl sugar 1 tsp cinnamon 1 tbl butter bread: 1 1/2 C. white flour 1 1/2 C. whole wheat flour (orig. just white) 2 tsp baking soda 1 1/2 tsp cinnamon 1 tsp nutmeg 1 tsp cloves 1/4 tsp allspice 15 oz can of pumpkin 1/2 C. oil (reduced from 3/4 C) 1 1/2 C. sugar (reduced from 2 C) 4 eggs 2 C. chopped apples Blend first four items and set aside. Sift flour with baking soda and spices, set aside. In a large bowl, whisk pumpkin, oil, sugar, and eggs. Add flour to pumpkin mixture and combine well. Fold in apples. Divide between two greased 9x5" pans. Sprinkle the cinnamon topping evenly over each loaf. Bake at 350' for 50 minutes or until a pick inserted near the center tests done. Cool in pans on wire rack for 45 minutes, then remove from pans to cool completely.
