purple cow peas

purple cow peas

So, yesterday when I went out to my garden for the routine check, I noticed that I had a lot of purple cow peas. A LOT. I had originally planted them for their pretty color, but it has now occurred to me that I should obviously do something with the crop. I haven't taken a picture of them yet, so I found one of five pictures of purple cow peas on the yahoo images search.

So I have two questions. One, the main one, is what can I do with these peas/beans (?) culinary wise? Do I dry them? Do I freeze them? Can I eat them raw, or do they have to be cooked? What dishes are they good in?

My second question is, are these under a more common name? There were only five images in the image search! Are they just not that common? Oops, that was a third question. So yeah, what are your thoughts on this?

(Thanks in a advance).
