Quick, Cheap Tofu
I've found myself doing a lot of the cooking for my family lately - I lived on my own for a bit, and developed a pretty healthy repertoire of cheap recipe ideas, which have come in handy now that we find ourselves struggling a bit with bills. The problem is, my sister is a vegetarian, and one of my big "keep things cheap" strategies is chicken. I've managed to find ways to either substitute tofu in the recipes I make for most meals, or pull from an ever-growing collection of easy tofu recipes to make her a separate dish using similar ingredients, but there's one thing I make frequently I haven't been able to find a good substitute for: chicken salad. I make this constantly - it's so easy, we all prefer it to lunch meat, and boiling the chicken for it keeps us with a regular supply of chicken stock I can use for soup when it gets cold (I freeze each new batch), so we always have some in the fridge for lunches. So far, no one's gotten sick of it - I'll add new seasonings or a little dressing to the basic chicken+mayo recipe so it's a little different very time. Problem is, without me making different things for lunch, my sister's a little out of luck. So...I've gotten a little tl;dr here, but my question is: what's an easy, quick, cheap tofu lunch-y recipe I can make in big batches and keep around for my sister to gobble when the rest of us are nomming on chicken salad?
