Recipe: Parmesan Yogurt Chicken

Hello friends!

I figured I’d share this recipe that I made recently. Its REALLY GOOD and very easy to make. I’m not a big fan of yogurt, so if you’re not a yogurt fan, don’t let it scare you. It really is tasty. I served it with brown rice and broccoli with toasted almonds. I don’t remember where I got the recipe, but wherever it came from, kudos to them!

Parmesan Yogurt Chicken
(Makes 6 Servings)

INGREDIENTS:
* 6 boneless, skinless chicken breasts
* 2 tablespoons of lemon juice
* Cayenne Pepper (to taste)
* 1 cup of plain lowfat yogurt
* 2 tablespoons of flour
* 1/4 cup of fat-free mayonnaise
* 3 tablespoons of dijon mustard
* 1/4 teaspoon of Worcestershire Sauce
* 1/2 teaspoon of thyme
* 1/4 cup of minced green onions
* Paprika (to taste)
* 2 tablespoons of grated parmesan cheese

DIRECTIONS:
Preheat oven to 350 degrees F.

Arrange chicken in a lightly oiled baking dish. Drizzle with lemon juice. Sprinkle lightly with cayenne pepper.

In a small bowl, mix yogurt with flour, then add mayonnaise, mustard, Worcestershire and thyme. Spread mixture over chicken. Top with green onions and sprinkle with paprika.

Bake uncovered for 60 minutes or until tender.

Sprinkle chicken evenly with parmesan cheese. Broil until cheese is slightly brown. Serve warm.
