Sensory Garden Zone 5 – suggestions? comments?

I'm doing some volunteer work as part of my (advanced) master gardener outreach. The work is going to be done at a local park where I jog on a regular basis. One of the concerns is that there's alot of open lawn to mow, which is very time consuming for the one groundskeeper (she does a great job, but she's only one person). I was going to suggest some spots be dedicated to a butterfly garden and/or a sensory garden I've come up with a list of potential plants for a Sensory Garden, but I thought I'd ask here for any suggestions/comments. Remember this is for Zone 5/6, and it's got to be a low maintenance collection of plants (they'll be tended to every two or three weeks or so during the growing season). Unfortunately, no veg! too many bunnies and woodchucks at the garden (and hungry joggers LOL) I got most of this list from Lucy's Garden, which has alot of good ideas. Some of the plants they've listed can be considered invasive, or don't grown in my zone, so I've removed some of those from the list This is still in the planning stages.. if it happens, I think we'll just be clearing the area this year, I don't think we'll have time to have it planted, but I want to get together a 'wish list' here's the list (it's long): TOUCH Lambs Ears ( Stachys byzantia) ~ very silk foilage feeling just like a little lambs ear Silver Sage ( Salvia argentea) ~ has silvery white leaves that feel a little bit like cotton wool to the touch Houseleek Sempervivum 'Commander Hay' ~ this plants leaves are very rigid and tought to touch Prickly bull thistle (Cirsium vulgare)~ very prickly leaves for feeling.. can be invasive!!! Globe Thistle (Echinops) spiky flower heads Teasel (Dipsacus fullonum): large spiny seed heads Hedge woundwort (Stachys sylvatica) hairy leaves Yucca ~ pointy, sharp. I have some in my yard I can transplant Teddy Bear sunflowers (I think they're supposed to be fuzzy?) Scotch Broom Heather Hops Yarrow Gayfeather (Liatris spicata) very soft Coneflowers (prickly) Chicks&Hens TASTE Nasturtiums Violas (Viola sororia?) Berries (wild raspberries) Sweetcorn (rustles in the wind) Herbs : Mints Peppermint Spearmint Pineapple Mint ( see if kids can taste the difference) Sages Pineapple Sage Purple Sage Thyme Rosemary Anise Fennel Oregano Parsley Chives Garlic Chive Dandilions SMELL Fragrant plants Clethra ( vanilla scent) Honeysuckle Lavender Lily of the Valley Sweet Annie Sweet Pea Roses Scented Geraniums ( you can have apple,pineapple) Sweet Peas Oriental Lilies Heliotropes Chameleon plant( Houttuynia cordata; colored foliage that smells of lemon) Fragrant herbs Peppermint Pineapple Mint Thymes Sages Chamomile Lemon Balm( makes delicious homemade lemonade) Agrimony ( smells of apricots ~ Eupatorium cannabinum 'Plenum') SIGHT Balloon Flowers ( blue blossom ~ Platycodon grandiflorus) Ret Hot Pokers (Kniphofia uvaria) Jacob's Ladder (Polemonium caeruleum 'Brise d'Anjou') Solomon's Seal (Polygonatum biflorum) Giant Sunflowers (Helianthus annuus can grow up to 30cm (1ft) in height in a week) Gigantic Grasses Poppies ( large ones and multicolored ones) Cornflowers (Centaurea cyanus, also Bachelor's Button) Zinnias Marigold ( bright orange and golden yellows) Heuchera 'Chocolate Ruffles'; purple leaves with chocolate-coloured undersides,pink flowers) Chinese Lantern (Physalis franchetii) gold coloured lanterns in autumn Russian Sage Purple Sage Verbena Angelica gigas( giant fast growth) Lady’s Mantle (Alchemilla mollis) looks lovely when wet HEARING Grasses Rattle Snake Grass (Briza media) Greater quaking grass, Briza maxima Bamboos Bamboo Phyllostachys (Phyllostachys aureosulcata whispering sound) but IS THIS INVASIVE??? in my zone Animated Oats (also not sure if it's INVASIVE in Zone 5) Love in the Mist ( rattling seed heads) Miscanthus oligostachyus 'Nanus Variegatus'( bamboo-like foliage that is noisy) Sweetcorn (rustles in the wind) Canterbury bell (Campanula medium) attracts lost of buzzing bees windchimes bird feeder
