skillet nachos -bang for the buck!
Hi all you poor skillers, I have a looooooose recipe for what my friends call skillet nachos. There are endless variations, and they can be made on the SUPER cheap! I thought I'd pass it all along. :) I'll give the outline of what I made for dinner tonight, and then a list of suggestions. Skillet Nachos 1 lb ground beef 1 can black beans 1 can corn kernels ~ 1 cup shredded cheddar cheese* chips salsa Brown the meat and spice to taste or as budget allows, make sure to drain excess oil. Drain black beans and corn. Once beef is fully cooked, add in black beans and corn, stirring together, adding spices as desired. Cook together for about 3-5 minutes. Get out your chips, slaasa and cheese, add to taste and enjoy! Makes enough for 5-6 adults. * Shredding your cheese at home is WAY cheaper than buying a bag. Okay, so there are tons of ways to change this up. If you're a vegetarian, or meat is too expensive, just use the beans. Beans are a great source of protein, just warm them up with spices before adding other veggies. You can also used frozen corn (or other veggies) instead of canned. One of my friends adds diced tomatoes, chopped black olives and mixes in sour cream. Some folks add shredded lettuce right at the end. You can also shred some chicken instead of beef if you'd prefer. If you leave out the dairy (sour cream, cheese) you can put your leftovers in a plastic container and either freeze them for later, or pop them in the fridge and add to salads, or to traditional tortilla shells.
