Spinach indoors?

Next year, I’ll be living in a dorm that’s facing either north-west or south-east (depending, of course, which side of the hall I am on ;-P), and I kind of want to grow veggies of some kind. In pots, of course. :-) I lovelove baby spinach, and I’m vaguely wondering if it would work at all to try to grow some in a pot indoors…either next to the window, or if that’s not enough light, with a sunlamp. And, I assume (don’t laugh, I know it’s kind of a silly question) that baby spinach is just regular spinach…only younger? Eep. I’ve never done any gardening before that wasn’t Nazi mint, so I really don’t know. So yeah. Spinach. And a pot of chives, because they are delicious. Anything else that would be tasty and relatively low-maintenance to grow indoors?
