Starting seed in containers

i've been attempting to start seeds in pots inside at different times this year, in the hope of having an indoor herb garden fort he fall/winter months. However, i've been having the WORST luck getting them to live past the seedling stage. i plant them, i water them and give them lots of sun. They sprout happily, start to grow, live and look great for awhile. And then they suddenly fall over and die, the tiny stems looking all shrunken and dessicated right at the root/soil level. And i can't for the life of me figure out WHY. It's happened with almost everything i've tried to grow from seed, no matter what type of plant it is. Can anyone help me here? i'd love some idea of what i can do to get these plants to grow past the seedling stage and into healthy, producing plants. Thank you! :)
