That “wet dog” smell

Help! We recently acquired a lovable Saint Bernard (Jasmine) and she's an absolute dream of a dog - she's got the greatest personality, so friendly, calm, well-behaved... BUT... between the CONSTANT shedding and the 'dog' smell that has begun to permeate my basement (we have a finished basement and she sleeps on a bed down here at night) I am worried the relationship just 'wont work out'. We brush her every day or every other day and are constantly getting a lot of fur off when we do it, but she's still shedding EVERYWHERE!! It's on everything! Somehow, it got in a bowl of lasagna the other night, too! I literally am getting so frustrated with this shedding nonsense I could scream! Actually, I think I already have. Other than daily vacuuming/sweeping and brushing her, is there anything else I can do!? For the smell, I guess its either her bed or the carpet but either way it reminds me of 'wet dog' and I can't stand it. Sadly, my office is also in the basement bedroom and I have to work down here every day. I've bought some Arm & Hammer carpet deoderizer to use when I vacuum, but so far, that just makes it smell like perfumed wet dog. I haven't used it on her pet bed yet, though. I'm really concerned that I won't be able to handle having her in the house at all if this keeps up. I should mention that I'm a serious neat-freak and have a moderate to severe case of obsessive-compulsive dissorder. This dog-shedding nonsense has sent me into bouts of anxiety two or three times already. I have GOT to figure out how to get this under control, otherwise we'll have an 'its me or the dog' scenario!
