Transplanting Delays, Seedling Questions…

Due to the rains we've been having in Texas as well as delays in getting my beds set up, I've had to put off transplanting until today. I have a few questions about my seedlings, so... 1. Summer Squash These plants are about six weeks old, and I'm worried about them. After the third true leaf emerged the cotyledon leaves started dying off and flower clusters appeared. There have been buds on this plant for a little over a week. Is this normal for squash, or caused by stress on the plant? Should I remove the flower buds before transplanting to give the plant a chance to make more leaves? 2. Okra They look skimpy! No progress on the egg thing. I'm just going to let nature take its course and deal with the consequences. 3. Melons! Can you tell me which one is watermelon and which is muskmelon/canteloupe? I forgot to label them! 4. Peppers It took almost three weeks to get these things to germinate and come up. If mankind suddenly became extinct, peppers would die off with the corn and the miniature poodles. My question here is.. do I bury the stem like tomatoes? I read that you can also do that with basil, but I've also gotten conflicting information on that. 5. Tomatoes The three varieties I'm growing this year. Some sort of grape tomato (I'm sorry, but I'm not a huge fan of these things. Every time I bite into one I imagine an eyeball in my mouth.), Banana Legs, which makes little 1" x 3" paste type yellow tomatoes, and finally Bonny Best/John Baer, which has been the least consistent as far as seed viability. I have raised beds and it gets very hot here, so of course I will be burying these guys as deep as I can. The question is.. I've read that I can remove the first set of true leaves before planting, but will they survive it when they're this small? Alright, I need to get some actual work done.
