Tomato-Garbanzo Stew This is a hot, filling, slightly spicy stew to warm you right up. It's a nice variation on the usual chili or chowder. It keeps well in the fridge, and it's just as good reheated as it is fresh. And it can easily be made vegetarian by using fake bacon or leaving out the bacon altogether. Takes about 40 minutes to an hour, including chopping, peeling, and cooking. You'll need: - About 1/4 package of bacon (real, fake, turkey, Canadian, or any approximation thereof) - Olive oil (if you're using something other than real pork bacon) - 1 tsp ground cumin - 1/2 tsp cayenne pepper - 2 medium onions, chopped - 4-5 cloves of garlic, chopped - 1 28-oz can diced tomatoes - 2 15-oz cans garbanzo beans - 1 cup lowfat plain yogurt - Zest of one lemon, chopped (white stuff left on the peel is fine) Cook the bacon until it's nice and crispy but not burnt. Chop it up into little bits and set it aside. In the oil left over from cooking the bacon, saute the onions, garlic, cumin, and cayenne until the onions get soft. Add olive oil if necessary to keep it from sticking. Dump in the tomatoes and garbanzos, juice and all. Cover and simmer for 20 minutes. Add the yogurt, the lemon zest, and the chopped-up bacon. Stir well, and let simmer for a few more minutes. Serves about 6.
