yet another cheap yummy & nutritious soup recipe
I love cabbage and tomatos and soup so I combined these elements and made it sippable(I realize cabbage soup isn't an original concept by any means) 1/2 or more if you want large green cabbage shredded(39 cents a pound) 28 oz can of whole tomatos in puree(redpack was on sale for 99 cents at the local market. Buy whatever is cheap) 1 medium white onion diced 2 fourteen oz. cans of chicken broth(I bought two cans for a dollar of college inn garlic flavored chicken broth at the dollar store but if boullion cubes fit your budget by all means use that) whatever seasonings you like. I add garlic power, salt, pepper and a bit of cumin. optional: rice or pasta for starchy bits a pinch or two of sugar/artifical sweetner sautee the onion until translucent, add cabbage until wilted, add tomatoes breaking them up with a spoon, add broth and if you're going to add the optional starch add it at this point too. Cook until done(30 mintues) and voila a fairly healthy soup.
