calling all canners!
here at the inauguration of gardening season, i think it would be fun to swap some of our favorite canning recipes, or to post recipes that we would like to find or try. this way, as the bounty rolls in, we have the recipe at the ready. and of course, the pleasure of anticipation here's my philosophy: 1) i don't own a pressure canner, so everything i make must be acid or sugar preserved. 2) i don't can anything that isn't special. as in, i'm totally not interested in putting up cans of green beans (though dilly beans--there's a differet story). 3) i'm mostly a small-batch canner and recipes that make 4-5 pints, or 3-4 qts. of something is really helpful to this kid over 20 pts, or recipes that start with "take 4 bushels". okay, my opening sally: anyone got a great green enchilada sauce recipe for canning? i'm growing tomatillos and would love to preserve them this way. looking forward to that moment when i fill my last jar-- holly
