Native plants that flower…

I live in Austin TX. I am a first time "gardner" and home owner. I planted a ton of sunflowers...because I knew they were easy to care for, and there is PLENTY of sun in TX! LOL They have been doing wonderful...until I checked on them today. The larger variety is about 3.5' at this time, and the smaller variety is about 1.5'. They have been growing wonderful, and then when I went to water this morning and it looks like the deer had a late night snack on them. :( Once the top part of the sunflower is missing, they are junk right? Should I just pull up what is left and compost? Does anyone have any flowering plant suggestions that deer proof? Or, some ornamental plants that they will not like that I can plant to brighten up my flowerbeds? TIA
