Perennial help

Perennial help

Good morning! I need advice on what to do w/ non-bulb perennials now that they're all dying off. I have Black Eye Susans, Bee Balm, and various other non-bulb flowering perennials and I'm not sure what to do w/ them - do I let them wither on their own and then cut them down to the ground, like w/ bulbs? Or do I deadhead them and let the stalks/leaves stay? I'm sure it varies w/ the plant, but as a general rule (since I don't know what half of them are - we moved into this place only about a year ago so most of the plants are still the old owners') what should I do? Help! :)
